I don't include software for studying kanji, vocab, etc. because there are already a couple of great programs for this that one can easily install onto the Axim (installing programs is simple and takes 30-40 seconds). No need for me to reinvent the wheel. I like KingKanji; some prefer PocketStackz; and there may be a few other contenders with fans out there, too. Use the free trial periods to compare a couple of different programs so you can choose the one that works best for you.
Remember: the Axim is a computer for which hundreds of thousands of apps are available. I've set it up with the best dictionary software I could find and make, but you're free to look for and add programs to do whatever you want. Things that are hard to find or install I offer as options with the system (like the navigation package), but for everything else I leave it to the customer to decide.
As for your other question, I haven't done a formal survey, but in all those things--Japanese level, length of study, and reasons--my customers are pretty evenly spread out from newbies just taking up Japanese or about to move to Japan to fluent long-term residents and university professors and even a couple of native Japanese working as professional English translators.
Their reasons are just as varied: married a Japanese, coming to study or work in Japan, studying Japanese language or literature here or abroad, doing business with Japanese, technical translation, law enforcement, military, hard-core manga fans, and more.
